Ingredients

Wonder Protein Mince – 200 g (hydrate 30 min, drain)

Chia Seeds – 6 g, hydrated

Ginger – 6 g, minced

Garlic – 4 g, minced

White Onion – 16 g, minced

Beetroot Puree – 6 g

Panko – 20 g

Coriander Leaves – 4 g, minced

7-Spice Blend – 4 g

Olive Oil – 20 g

Salt – 4 g

Dressing

Coconut Yogurt – 30 g

Soy Yogurt – 70 g

Mint Leaves – 5 g, minced

Cumin Powder – 3 g

Coriander Powder – 2 g

White Pepper – 1 g

Salt – 1 g

Lime Juice – 10 g

Method

1. Hydrate Wonder Protein mince for 30 minutes, drain, and set aside.

2. Mix with remaining kofta ingredients into a dough-like mixture.

3. Shape into 25 g ovals and deep fry at 180°C for 4–5 minutes until golden.

4. Whisk dressing ingredients until smooth.

5. Plate with dressing as base, arrange koftas on top.

Chef's Tip

Bake instead of frying for a lighter, healthier twist.
