Wonder Protein Mince – 200 g (hydrate 30 min, drain, then sautéed)
Leeks – 15 g, finely sliced
Sweet Corn – 150 g
Spring Onion – 6 g, sliced
Celery – 10 g, diced
Cucumber – 70 g, diced
Coriander Leaves – 10 g, minced
Lime Juice – 5 g
Olive Oil – 7 g
Salt – 2 g
Black Pepper – 1 g
Chilli Flakes – 10 g
Agave Syrup – 100 g
Jaggery – 60 g
Apple Juice – 100 g
Sunflower Oil – 60 g
Maple Syrup – 5 g
Apple Cider Vinegar – 5 g
Soy Sauce – 2 g
Salt – 2 g
Roasted Almonds – 40 g
Caramelized Hazelnuts – 30 g
1. Hydrate Wonder Protein mince for 30 minutes, drain, then sauté until lightly golden.
2. Heat sunflower oil, add chilli flakes, cook 3–5 minutes.
3. Add agave, jaggery, apple juice, maple syrup, vinegar, soy, and salt. Simmer 8–10 minutes. Cool.
4. Stir in almonds and hazelnuts.
5. Toss salad ingredients with WONDER PROTEIN mince, drizzle dressing.
Chill dressing before use for a sticky, glossy finish.
